Get a pot on the stove with the stock in it and bring it to a boil. Then turn the heat to low
In another pan heat oil on medium heat until shimmering. Add any aromatics and cook them appropriately.Add rice. DO NOT RINSE RICE BEFOREHAND
Cook the rice for about a minute stirring briskly the rice should take on a nutty aroma and have no browning
Add wine and cook until liquid is fully absorbed stirring frequently
Add in one ladel/half cup of simmering stock to rice. Stir frequently until liquid is fully absorbed and the rice is almost dry(5-10 mins). Repeat until you are out of stock or desired consistency is achieved
